Sweet Potato Toasts
I was seeing Sweet Potato Toasts all over my Instagram feed, so had to try out this trend myself! I never would have thought to use one of my favourite root vegetables in place of toast. Sweet potatoes are a great source of beta-carotene, which is converted to Vitamin A in our bodies. Plus, they make a delicious, fibrous, gluten-free alternative to bread. The possibilities of toppings are endless, but I’ve demonstrated 4 different varieties here.
Directions:
Cut sweet potatoes into long, thin slices (I left the skin on for convenience and added fibre, but you can remove it if you prefer). Place in toaster on highest heat. It took me 4 cycles of toasting to cook the slices; this may vary depending on your toaster. It should be slightly al dente.
Toppings:
- Pesto, parmesan shavings, balsamic glaze
- Natural peanut butter, cacao nibs, unsweetened coconut flakes, honey drizzle (a great breakfast idea)
- Sundried tomato hummus, avocado slices, hot sauce, cracked pepper
- Tahini, toasted pine nuts, pumpkin seeds
