Stuffed Breakfast Sweet Potato

I never would have thought to have sweet potato for breakfast, but this starchy, vitamin-A packed vegetable is finding it’s way into toasters, pancakes, muffins, and so much more! Thank you to Instagram for all of the wonderful food-spiration. You can literally stuff a sweet potato with whatever your heart desires, and make it both sweet and savoury.

Sweet potatoes are low on the glycemic index and high in fibre, which means that they raise and drop blood sugar at a slower rate, keeping you feeling full and satisfied for longer. When paired with protein-rich toppings, maintaining a stable blood sugar and satiety is even greater.

Ingredients

  • 1 sweet potato
  • 1/4 cup plain 0% Greek yogurt
  • 1/2 banana, chopped
  • Handful of blackberries
  • 1 tsp pure maple syrup
  • 1 tbsp tahini
  • 1 tbsp hemp hearts
  • Cinnamon, to taste

Directions

  1. Preheat oven to 400F. Using a knife, make a criss-cross at the top of the sweet potato. Wrap in tin foil and bake for an hour (until soft). Tip: you can bake it the night before and microwave it in the morning just to warm it up.
  2. While hot, spread yogurt and place bananas and blackberries on top.
  3. Combine syrup with tahini. Drizzle over fruit. Top with hemp hearts and cinnamon.
