Shrimp Tacos with Mango Salsa
Who doesn’t love #tacotuesday?! These shrimp tacos are easy to make, versatile, and can be modified according to taste preferences and dietary restrictions. A refreshing, tangy, nutritious summer dinner the whole family can enjoy! Plus, assembling them yourself allows you to control portions. Taco-bout a winning recipe!
Ingredients:
- 1 pack small wheat or corn tortillas
- 1 package frozen, de-shelled shrimp
- 1 tbsp vegetable oil
- 1 tsp each: paprika, chilli powder, minced garlic
- 1/4 cup juice of fresh lime
- 1/2 avocado, sliced
- Fresh cilantro or parsley
Mango salsa:
- 1 mango, chopped finely
- 1/2 red onion, chopped finely
- 1 red bell pepper, chopped finely
- Juice of 1/2 lime
Coleslaw:
- 2 cups shredded cabbage or coleslaw blend
- 1 tbsp vegetable oil
- 2 tbsp honey
- 1/3 cup lime juice
- 1 tsp ground cumin
Directions
Makes 6 – 8 tacos
- Make the mango salsa by combining all ingredients listed above. Set aside.
- Make the coleslaw by combining all ingredients listed above. Set aside.
- Defrost shrimp by running under cold running for a few minutes. Heat oil and garlic in a pan. Add shrimp, paprika, chilli powder, and 1/4 cup lime juice (modify according to spice tolerance). Shrimp are ready when they are pink and tails have curled. Remove tails before assembling.
- Assemble taco with shrimp, cabbage, mango salsa, and avocado. Garnish with cilantro or parsley, and a squeeze of lime.
